KANCHKOLAR KOFTA
These days the only thing a mom complains about her child is food habits. Children are allergic to vegetables. My teacher mom always finds out different methods to help her students fall in love with veggies. Kanchkolar Kofta is another lip-smacking veg recipe which your kids will love eating.

- Rich vitamins which help us to maintain a healthy body
- Controls blood sugar and cholesterol levels
- Prevents diarrhea
Kanchkolar kofta can be served in two different ways. Will come with both the servings.
Let's come to the process now.
Cuisine: Bengali
INGREDIENTS: (Serves 4)
- Kanchkolka: 4
- Grated Ginger: 1 teaspoon
- Chopped Chilly: 4-5 chopped tablespoon
- Besan: 1/2 cup
- Finely chopped onion: 2 medium sized
- Onion paste: 1/2 cup
- Ginger garlic paste: 3 tablespoon
- Tomato puree: 1/2 cup
- Cashew paste: 2 tablespoon
- Sugar: optional
- Cumin seeds
- Salt as per taste
- Oil for frying and for gravy
- Turmeric: optional
- Water: 3 cups
- Ghee optional
Boiled kanchkola & Salt
Besan
Ginger
Onion, garlic, ginger, chilly (for curry)
Turmeric
Cashew Paste
Oil
Cumin Seeds
DIRECTIONS:
- Cut the raw banana into 3-4 pieces as shown in the picture.
- Boil them with a pinch of salt and turmeric.
- Let them cool.
- Peel off the boiled bananas in a dish.
- Smash them so that no lumps are found.
- Add salt, 2 teaspoons chopped chilly, grated ginger to the paste and mix well.
- Add besan to tighten the paste and form a dough.
- Taste if the salt is perfect.
- Make small balls out of the dough and press it in your pumps, as shown in the picture.
- Heat oil in a shallow pan.
- Fry the balls until golden brown.
- Take it out of the pan. (N/ B: You can serve this as snacks for your kids or follow from step 13)
- For gravy heat the leftover oil.
- Add cumin seeds.
- Add the chopped onion and fry till golden brown.
- Add onion paste, ginger garlic paste, chopped chilly, and stir.
- Add turmeric and salt.
- Can add sugar if you prefer.
- Mix the ingredients well.
- Add cashew paste and tomato puree.
- Stir well till the oil is separated from the mixture.
- Add water and bring to boil.
- Add the fried balls.
- Cover the pan and allow to cook for 7-10 minutes.
- After 5 minutes turn the koftas so that the gravy penetrates in them.
- When the gravy thickens add ghee on the top.
- Turn off the heat.
- Kanchkolar Kofta is ready to serve hot with paratha or roti.
Peel off the boiled kanchkola
Add grated ginger and chilly
Add besan and smash
Make balls out of the dough and press in your palms
Add oil
Fry the koftas
Fry till golden brown
Take the koftas out of the pan
Fry can also be served as snacks.
Add ghee on the top
N/B:
- For thick gravy, you must add onion paste and cashew paste.
- I always prefer tasting my recipes before serving.
