Hi all, hope you had a great friendship week. This friendship week my dad’s friend from Bangalore visited our house surprisingly. Uncle and aunty were talking about the good old days and what they used to like a lot. They were chatting about their food habits. Aunty was talking about 'Oal, Kochu, Ghatkol' and how much they miss these foods in Bangalore.
Then, my mom the prepared Ornamental Chochori for them. We had it many times but never thought that people could miss Oal badly. Then I came to know about the health benefits. I was astonished that a vegetable which I never thought so important has now become my weekly routine and thus have named it ‘Ornamental’
As Oal is not so tasty by itself, you need to cook it differently. I have shared the recipe with Hilsa head as it changes the complete taste and also Hilsa nurtures the dish to another level. Another fact is that it can grow on any type of soil anywhere. So, you can plant it in your Kitchen garden as well. Try to serve this to your kids. Consuming organic vegetables are the best way to stay healthy and prevent diseases.

Ingredients: (Serves 4)
Oal/ Elephant Foot Yam- 300g
Ilish Muro/Ilish Head- 2 (cut into halves)
Turmeric
Salt for taste
Chilly slit
Mustard Oil
Sugar
Jeera/Cumin seeds
Jeera/Cumin paste- 2 teaspoon

Directions:
Wash the Muro and clean properly
Marinate it with turmeric and salt
Cut the Oal into rectangular pieces
In a pressure cooker add 2 cups of water, a pinch of salt and Oal
Wait for 7-8 whistle
Let it cool
Meanwhile, in a pan heat 4-5 tablespoon of oil
Fry the Muro till golden brown or till fried
Keep it aside
Now, smash the Oal. Make sure there are no lumps
In a pan, heat 2 tablespoon oil
Add chilly and cumin seeds
Now, add the smashed Oal, and saute
Add jeera paste, turmeric, chopped chilly and if needed add salt and saute
Add the fried Muro to the Oal mixture and saute
Cover the pan and cook for 8-10 minutes
Uncover it and add 1 teaspoon of mustard oil
Then sauté constantly. The process has to be cut and fold process
When the mixture leaves oil, it is ready to eat
Serve hot with steamed rice
