Egg Rabri...my mouth is already watering. Hi friends! today I present an Eid special delicacy, Egg Rabri. Rabri is a pure veg dessert. But many non-vegetarian friends of mine skip desserts as it's a veg dish. Huhhhhhh!!! you don't know how much you lose if you skip your dessert. For them, I have innovated this recipe where you can get the feel of dessert and a touch of non-veg. You won't generally find Egg Rabri in any shops so I am sharing the simple easy steps of how you can make it in a blink. It is an Indo-Pak milk-based dessert. 

While having Rabri,  please forget about the health benefits as it is full of calories and fat. I have been following people who are eating sugarfree sweets, sugarfree ice-creams...Are Bhai a Misti without sugar is like a man without a heart. Misti is the heart of Bengal. 

For Diabetics friends, let me tell you sweet dish has very less connection with your 'Sugar level going up'. Take less tension and try my dish. Still, if you are confused, use 'Sugarfree' tablets instead of sugar. Note: Consuming such tablets is injurious to health.

Ingredients: (Serves 4)
  • Whole Milk: 1lt
  • Egg: 3-4 beaten
  • Cardamom: 4-5 crushed
  • Saffron: few pinches
  • Dry fruits if you wish
  • Sugar: 1 1/2 cups

Directions:
  1. Boil milk in a heavy bottomed pan on low heat. 
  2. Add crushed cardamom and stir. 
  3. Boil till the milk thickens and becomes half a litre.
  4. Add saffron and dry fruits and bring it to boil.
  5. Now, add sugar.
  6. Add the beaten eggs and stir slowly.
  7. When you find the eggs are cooked and transformed into thin sheets, switch off the flame.
  8. Your Rabri is ready.
  9. Serve when it is cool. 
  10. Garnish with Saffron or dry fruits.

N/B: Never stop stirring milk while it's boiling as it may burn and give a smokey flavor.  Never add sugar in the first step as sugar never allows dry fruits to become tender. Taste your food before serving.
